Ingredients

    • 500g
      Beef Brisket
    • 1/2
      Red Pepper
    • 1/2
      Onion
    • 2
      Eggplants
    • 2 tablespoons
      Olive Oil
    • 2 tablespoons
      Red Curry
    • 400g
      Coconut Milk
    • 2 tablespoons
      Brown Sugar
    • 1 tablespoon
      Fish Sauce
    • 1 tablespoon
      Salt
    • 1 tablespoon
      Pepper

Step 1

Marinate the beef cubes with salt and pepper.

Step 2

Chop all vegetables

Step 3

Bring water to boil and cook the beef cubes. Then, boil the vegetables and set aside.

Step 4

Heat olive oil in a pot. Then, add red curry and saute until fragrant. Mix the brown sugar, coconut milk, and fish sauce with a little water, then stir and mix.

Step 5

Turn the heat to medium and add in the boiled beef cubes. Cover with lid and cook for 30 minutes over low flame.

Step 6

Add the vegetables into the stew and continue cooking for 5 minutes.

Step 7

Scoop the curry into a cut pineapple for a refreshing fruity taste.
